
Recipes For Travel and Pleasure
Here we will put recipes we find that are great for traveling as well as pictures of food along our journeys. We love eating good food that we’ve prepared as well as finding unique local restaurants when we travel. The above photo came from the Blue Skye Brewery in Salina, Kansas and was their Texan burger. It was an amazing mixture of burger with pulled bbq pork on top. Stay tuned for more food pics as well as recipes we love when traveling.

Today we are sharing our favorite taco recipe that we have been tweaking over the last few months. You can add whatever ingredients for toppings that your family enjoys. The ingredients are:
- 1 lb. ground beef or turkey
- 1 15 oz can diced tomatoes
- 1 small can tomato sauce
- 3 tablespoons taco seasoning – we used homemade seasoning
- 1 15 oz can black beans
- 1/3 bar cream cheese
- 1 small can corn
- 2 cups cooked Rice – we use Texmati rice
- Shredded cheese – we use colby jack
- 1 small can black olives
Brown the ground meat until it’s done and strain any grease. Add in the tomatoes, sauce, beans, cream cheese and corn. Mix all these ingredients until the cream cheese is melted in to the mixture. Add in the rice and shredded cheese until well mixed. Top with more shredded cheese and black olives. Serve either in a bowl or in taco shells as you prefer and top with any other toppings your family enjoys.

Chicken Fajita Casserole
So I made up a new recipe today using leftover chicken fajita meat with the peppers and onions from dinner last night. We also had leftover rice from the taco meat that we made a few days ago (see recipe above).
- Chicken Fajita meat with leftover peppers and onions chopped up
- 1 can Cream of Chicken soup
- 1 cup Sour Cream
- 1 cup Cheese – I used Cheddar/Jack mix
- 1 can Diced Tomatoes (undrained)
- 1 cup (approximately) Rice – great use for leftover rice
Basically I just dumped all the ingredients in to a pot to heat up and combine all the flavors. I also tweaked the seasonings a bit as well. The fajita meat already has tons of flavors that they marinated in for about 5 hours before we cooked them. I added a touch of salt, cumin and paprika to taste. I served it with some Fritos to give it a bit of crunch to it. Enjoy!
